Ingredients
Managu
1 large chopped onion
3 chopped tomatoes
3 cloves garlic (crashed)
2 Tbsp cooking oil
Salt & pepper
Method
Pick out managu leaves from the stalks, wash and boil until tender.
Heat pan on a medium heat, add oil, chopped onions and crashed garlic. Stir well and cook until tender.
Add tomatoes and cover until the tomatoes are completely cooked.
Add managu.
Cover and simmer for 5 minutes.
Serve.

16. Buttered Spinach
Ingredients
1.4kg Spinach (Trimmed, selected, washed).
160g Onions(finely chopped).
little chopped garlic.
120g butter.
salt.
Nutmeg (optional).
Method
Blanch the spinach (if ordinary spinach is used boil it for about 5 minutes).
Drain and cool spinach completely.
Melt butter in a stewing pan, glace onions, add garlic and add the squeezed spinach (by hand).
Stir with a wooden laddle, add salt and little nutmeg. Place a lid on top and steam the spinach shortly - toss.
Add 1/2 lt milk - cream sauce to the spinach.
serve.

Cooking oil 2 Tbsp

Method
Heat pan on a medium heat,
add oil and mince meat.
Cook until it turns brown.
Cook the pasta(follow the steps on the packet or the recipe below) while the mince meat is cooking.
Add chopped onions and garlic to the meat.
Stir and cook until the
onions are tender.
Add blended tomatoes, cover and simmer for 5 minutes.

13. Samosa
Ingredients
Flour 200g
Pinch of salt
Lemon juice
water.
Method
- Mix flour, salt and the water to make a dough.
- Knead the dough until soft and fluffy.
- Roll and make thin flat rounds, bake or use a pan.
- fold to make a pocket.
- fill with the cooked minced, seal using wheat flour paste as a binder.
Samosa filling
Ingredients
Flour 200g
Mincemeat 200g
Large chopped onions 1
Salt & pepper to taste
Piece of ginger (crushed) 1
a little Cumin
A little cinnamon
Chilies (Optional)
garlic (crushed)
Method
- Half cook the mincemeat, with cumin and a little fat.
- Take meat out of heat, add chopped onion, crushed garlic, fresh ginger, cinnamon and salt.
- Taste carefully, do not return to heat instead use it for filling.
- Deep fry till crisp and brown.
- Serve with slices of lemon to squeeze over.

1tsp Baking powder
11/2 Sugar

Mix baking powder with flour, add sugar, milk and eggs.

Pour mixture careful on the pan. Cook until it is done.

2 Butternut Squash (Cut into 1/2)
Cooking oil 4 Tbsp
Fennel seeds ( roasted and grounded) 1tsp
Corinder seed (roasted and grounded) 1tsp
Salt and pepper
Method
Peel squash, cut in half lenthwise, remove all the seeds.
Cut into 1/2.
Roast fennel and coriander seeds in a small saute pan over a medium heat until thoroughly roasted.
Mix spices and salt well with oil.
Toss the squash with the spice oil to coat evenly
Place squash slices on a single sheet tray.
Roast in 450 degree oven for 12 minutes until you get good color.
Serve!!!

10. Coconut Cookies
Ingredients
100 grams butter
1 cup self raising flour
1/2 cup sugar
1 cup desicated coconut
1 large egg.
Method
Preheat oven to 180 degrees and line tray with
baking paper.
In a bowl whisk sugar and butter until smooth.
Add the egg and continue whisking until light and
fluffy.
Add in the flour and desicated coconut and combine.
Use a teaspoon to scoop the dough and shape into
2cm balls and place on baking tray leaving enough space between each.
-Bake for 10-15 minutes until they turn a light
golden brown.
