90. Roasted Mushrooms

Ingredients
3 cloves garlic(finely chopped)
8 oz Mushrooms 
1 Tbsp Olive oil
1/2 Tsp Thyme
1/2 Tsp Salt & Pepper

Method 

1. Wash  mushrooms, rough chop them and put them in a big bowl, add olive oil, salt, and thyme.
2. Mix well,  roast them in the oven at 350 degrees Fahrenheit for 25-30 minutes or until done.

Serve.

89. Alfredo sauce

Ingredients 
1 cup cream
5 tbsp butter
2 cloves garlic (small diced )
1 cup Parmesan cheese

Method
1. Heat pan on a medium heat, add butter, and cream. 
2. Add garlic stir, and cheese while stirring. 
3. Cook for 5-10 minutes. 

Serve

88. Chicken with coconut sauce(kuku wa kupaka)

Ingredients
Whole chicken (prepared and cut into half)
1 tsp turmeric
1 tsp coriander
1 tsp chilli powder
1 tsp paprika
1 tsp salt
1 tsp pepper
Whole garlic (crashed)
1 tbsp ginger (crashed)
1/2 onion (diced small)
1 tbsp cooking oil
1 lemon (juice)


Method
1. In a big bowl mix all the spices together.
2. Add lemon juice, cooking oil, garlic, ginger and salt to the mixture.
3. Using gloves/ tongs, add the chicken into the bowl and apply the mixture.
4. Cover and put in the refrigerator for an hour.
5. Using a grill/ broiler/ jiko roast the chicken until done.
6. Apply coconut sauce and serve.

87. Guacamole

Ingredients

2 avocados 🥑 - seeded 
1 lemon 🍋 - juice
1/4 onion - diced
2 cloves garlic - diced 
1 tomatoes 🍅 - diced
1/2 teaspoon salt

Method
1. Mash avocado and lemon juice.
2. Add salt.
3. Fold all the other ingredients together. 
Serve.
