49. Mukimo



Mukimo is a beloved Kenyan dish, especially among the Kikuyu community. It is a mashed mixture of maize, potatoes, greens, and sometimes beans or peas. Mukimo is commonly served with beef stew, fried eggs, or vegetables during family meals, weddings, and ceremonies. It is filling, nutritious, and flavorful.


Ingredients

  • 6 medium Irish potatoes, peeled and chopped
  • 1 cup green peas or cooked beans (njahi or ndengu can be used)
  • 1 cup sweet corn or green maize (boiled or roasted)
  • 1 bunch of pumpkin leaves, spinach, or sukuma wiki (finely chopped)
  • Salt to taste
  • 1 tablespoon butter or cooking oil (optional)

Method 

  1. In a large sufuria, boil the chopped potatoes in salted water until soft.
  2. Add the chopped pumpkin leaves (or spinach) and green peas to the pot.
  3. Cook together with the potatoes until the greens are tender.
  4. Add pre-cooked green maize or sweet corn to the mixture and cook for another 5 minutes.
  5. Drain any excess water if necessary.
  6. Use a wooden mwiko (cooking stick) or potato masher to mash everything together into a thick, smooth consistency.
  7. Add butter or oil at this stage if desired for richness.
  8. Scoop and mold the mukimo onto a plate. Serve hot with beef stew, chicken, fried eggs, or vegetables.
