48. Barbecue Chicken Wings




Barbecue chicken wings are a favorite in many Kenyan households and gatherings. They’re perfect for holidays, parties, or a weekend treat. This version keeps things simple with easy-to-find ingredients and delivers that smoky-sweet flavor many people love. Whether you're using a grill, oven, or charcoal jiko, these wings are always a crowd-pleaser.

Ingredients

  • 1 kg chicken wings

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • 1 teaspoon paprika

  • 1 teaspoon garlic powder

  • 1 teaspoon ginger powder

  • 1 tablespoon oil

  • ½ cup barbecue sauce (store-bought or homemade)

  • optional: a squeeze of honey or a dash of chili sauce for extra flavor

Method

  1. In a large bowl, combine the wings with salt, pepper, paprika, garlic powder, ginger powder, and oil. Mix well to coat evenly.

  2. Cover and let marinate for at least 30 minutes (or overnight in the fridge for deeper flavor).

  3. Preheat your oven to 200°c or fire up your grill.

  4. Arrange the wings on a baking tray lined with foil or place them on the grill.

  5. Bake or grill for 25 to 30 minutes, turning once halfway through.

  6. Once cooked through, brush the wings generously with barbecue sauce.

  7. Return to the oven or grill for another 5 to 10 minutes until the sauce is sticky and slightly caramelized.

  8. Remove and let rest for a few minutes before serving.

Serve hot with kachumbari, fries, or on their own as a finger food. perfect for sharing and always a hit.
