9. Viazi Karai and Tamarind Sauce




Viazi karai is a popular street food along the Kenyan coast, especially in places like Mombasa. It’s made by deep-frying boiled potatoes coated in a spicy batter, often served with a tangy tamarind sauce. It’s simple to make at home and is perfect as a snack, appetizer, or side dish for your coastal-inspired meals.


Ingredients


For viazi karai

  • 5 medium potatoes, peeled and boiled until tender
  • 1 cup all-purpose flour
  • ½ teaspoon turmeric powder
  • ½ teaspoon chili powder (optional)
  • 1 teaspoon salt
  • ½ teaspoon baking powder (optional, for a fluffier coating)
  • ¾ cup water (adjust to make a smooth batter)
  • oil for deep frying

For tamarind sauce

  • 3 tablespoons tamarind paste or pulp
  • 1 cup water
  • 1 clove garlic, minced
  • 1 small chili, chopped (optional)
  • 2 tablespoons sugar
  • ½ teaspoon salt
  • ½ teaspoon cumin powder (optional)

Method

  1. Cut the boiled potatoes into halves or quarters and set aside.
  2. In a bowl, mix flour, turmeric, chili powder, salt, and baking powder.
  3. Gradually add water to form a smooth, thick batter.
  4. Heat oil in a deep frying pan over medium heat.
  5. Dip each potato piece into the batter, coat well, and gently drop into the hot oil.
  6. Fry until golden and crisp, then remove and drain on paper towels.

For the tamarind sauce

  1. In a small saucepan, mix tamarind paste with water and bring to a boil.
  2. Add garlic, chili, sugar, salt, and cumin powder.
  3. Let it simmer for 8 to 10 minutes, stirring occasionally, until it thickens slightly.
  4. Remove from the heat and let it cool before serving.

Serve viazi karai hot with tamarind sauce on the side. Crispy, spicy, and tangy — it’s a street food favorite that’s easy to enjoy at home.
