9. Viazi Karai and Tamarind Sauce
Viazi karai is a popular street food along the Kenyan coast, especially in places like Mombasa. It’s made by deep-frying boiled potatoes coated in a spicy batter, often served with a tangy tamarind sauce. It’s simple to make at home and is perfect as a snack, appetizer, or side dish for your coastal-inspired meals.
Ingredients
For viazi karai
- 5 medium potatoes, peeled and boiled until tender
- 1 cup all-purpose flour
- ½ teaspoon turmeric powder
- ½ teaspoon chili powder (optional)
- 1 teaspoon salt
- ½ teaspoon baking powder (optional, for a fluffier coating)
- ¾ cup water (adjust to make a smooth batter)
- oil for deep frying
For tamarind sauce
- 3 tablespoons tamarind paste or pulp
- 1 cup water
- 1 clove garlic, minced
- 1 small chili, chopped (optional)
- 2 tablespoons sugar
- ½ teaspoon salt
- ½ teaspoon cumin powder (optional)
Method
- Cut the boiled potatoes into halves or quarters and set aside.
- In a bowl, mix flour, turmeric, chili powder, salt, and baking powder.
- Gradually add water to form a smooth, thick batter.
- Heat oil in a deep frying pan over medium heat.
- Dip each potato piece into the batter, coat well, and gently drop into the hot oil.
- Fry until golden and crisp, then remove and drain on paper towels.
For the tamarind sauce
- In a small saucepan, mix tamarind paste with water and bring to a boil.
- Add garlic, chili, sugar, salt, and cumin powder.
- Let it simmer for 8 to 10 minutes, stirring occasionally, until it thickens slightly.
- Remove from the heat and let it cool before serving.
Serve viazi karai hot with tamarind sauce on the side. Crispy, spicy, and tangy — it’s a street food favorite that’s easy to enjoy at home.
