110. Steak and fries


In Kenya, steak and fries (often called “chips” locally) are a favorite in many restaurants and home kitchens. The steak is usually marinated with bold flavors like garlic, ginger, and spices, while the fries are deep-fried until golden and crispy. This combination is popular for weekend meals, special occasions, or as a treat when dining out.

Ingredients
  • 500g beef steak (sirloin or rump)
  • 4 large potatoes, peeled and cut into fries
  • 2 cloves garlic, minced
  • 1-inch piece ginger, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon vegetable oil (for marinating)
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon salt (adjust to taste)
  • 500ml vegetable oil (for deep frying)

Method

  1. Wash and peel the potatoes, then cut them into even-sized fries. Soak in cold water for 15 minutes to remove excess starch.
  2. Pat the fries dry with a clean kitchen towel.
  3. In a bowl, mix the garlic, ginger, soy sauce, black pepper, paprika, salt, and 1 tablespoon of vegetable oil to make a marinade.
  4. Coat the steak with the marinade, cover, and let it rest for at least 30 minutes.
  5. Heat the frying oil in a deep pan or fryer over medium-high heat. Fry the potatoes in batches until golden and crispy, then drain on paper towels.
  6. Heat a grill pan or skillet, and cook the steak for 3–5 minutes on each side, depending on your preferred doneness.
  7. Let the steak rest for a few minutes, then slice and serve with the fries on top.
