27. Omelette


Ingredients

3 eggs
All bell peppers (diced)
2 Tbsp Cooking oil/ butter
1/2 onion diced (optional)
1 Diced tomato (Optional)
1 tbsp grated cheese (optional)

Salt & Pepper

Method
1.Break the eggs in a bowl, Add the diced vegetables , grated cheese, salt & pepper and mix.
2. On a medium heat pan, melt butter or cooking oil.  
3. Add the mixer to the pan.
4. Cook until its well done/ your preferred temperature.

Serve.

26. Kebabs


Ingredients

1 Green, 1 yellow and 1 red peppers.
1 langer Onion.
Beef(chopped into cubes) 500g
Mushrooms
Skewers.
Cooking oil.
Salt and pepper.



Method

1. Marinate beef(cooking oil, salt and pepper)/ your favorite marinade.


2. Marinate vegetables. (Oil, salt and pepper)

3. Skew the vegetables and the beef.

4. Pre heat your grill and add your food. Continue grilling until ready.

25. Tomato Soup

Ingredients

Vegetable                      50g
Onions (Diced)            100g
Carrots (Diced)             100g
Wheat Flour                    50g
Tomato puree                100g
Chicken/ Beef Stock/vegetable      11/4 liters
Bouquet garni
Salt & Pepper


Method

1.Melt the butter, margarine or oil in a thick - bottom pan.

2.Add onions, carrots (mirepoix) and brown lightly.

3.Mix in wheat flour and cook to a sandy texture.

4.Remove from the heat, mix in the tomato puree.

5.Return to heat. Gradually add hot stock.

6.Stir to boil. Add the bouquet Garni, season lightly.

7.Simmer for approximately an hour. Skim when required.

8.Remove the bouquet Garni and mirepoix.

9.Pass firmly through a sieve, then through a conical strainer.

10.Return to a clean pan.  Correct the seasoning and consistency.

11.Bring to boil.

12.Serve fried or toasted croutons separately

24. Matunda (Fruit Salad)

Fruit Salad
Ingredients
1 Grapes (chopped into quarters)
1 Mangoes (Diced)
1 Bananas (sliced)
1 PawPaw (Diced)
1 Oranges (Pealed and chopped into halves)

Method
Mix all the fruits and serve.



23. Cake

Ingredients

2 cups wheat flour (Self rising)
1 cup of water
3 large eggs
4 Tbsp sugar
1/3 butter/margarine/vegetable oil


Method

Set the oven at 350 degrees.

Mix wheat flour, vegetable oil,sugar, eggs until moistened.

Combine all the ingredients together.  

Apply margarine/butter inside the baking tin. Put the mixture/batter in the baking tin.

Put in the oven and cook for 30 minutes.

Check by sticking a knife inside the cake to see if it is done.

Cake is done when the knife comes out clean.

22. Chicken-spaghetti-chickpeas-green beans.




Ingredients

1lb Chicken (Small dices)
1/2 cup onions (Roughly chopped)
2 cloves of garlic (Roughly Chopped)
3 tomatoes (Blended)
1 cup chickpeas (boiled)
1 cup green beans (blanched)
2 tbsp Cooking Oil
2 lemons/ 1/4 cup lemon juice
Dhania (Cilantro)
Salt and Pepper


Method

1. On a pan, heat oil on a medium high. Brown the chicken and add some lemon juice.

2. Add onions and garlic. Saute them until tender. 

3. Add tomatoes, chickpeas, green beans and stir. Cook until the meat is well done.

4. Add dhania and Serve.


Pasta


Ingredients

Spaghetti
Salt
8 cups of water

Method

1. Boil atleast 8 cups of water. 

2. Add salt to taste and pasta. 

3. Stir gentle and let it cook for 10 minutes or to a firm or tender. 

4. Drain well and set the pasta in the side. 

5. Serve with your favourite sauce




21. Mahamri

Ingredients;

 4 cups of wheat flour
11/2 cups of milk/water
1 cup of sugar
3 tsp yeast
1 cup of grated coconut (for coconut milk) /coconut milk from a can
1 tbsp cooking oil
1 tsp of cardamom

Method

1. Boil grated coconut, drain and cool the coconut milk to a room temperature.

2. Mix yeast with a 1/4 cup of warm milk and set aside to buble up. like 5-10 minutes.   
  
3. Add all the ingredients to the bubled up yeast.

4. Add coconut milk and knead. Set the dough on the table and continue kneading until it's soft, but not sticky.

5. Cut into 7-9 portions.

6. Roll to a nice round circle and divide/cut into quarters or small squares. Cover for 5-10 minutes.

7. Heat oil, add the piece of though one by one. Fry one side at time  and you can also try to fry two at time. 

8. Serve.

20. Beef Stew

Ingredients

1lb beef (Small dices)
1/2 cup onions (Roughly chopped)
2 cloves of garlic (cruched)
2 tbsp Ginger (crushed)
3 tomatoes (Blended)
2 tbsp Cooking Oil
Dania (Cilantro)
Salt and Pepper

Method

1. Heat pan on a medium heat and add oil. 


2. Season the beef with salt & pepper and slowly add it into the pan.
  
3. Cook until the beef turns brown and set a side.

4. In the same pan add onions, garlic, ginger and sauté them until cooked. 


5. Add the beef, tomatoes and stir. 


6. Simmer for 10 - 15 minutes.


7. Add dania and Serve.

19. Rice

Rice

Ingredients

11/2 cups of water.

1/2 cup of coconut milk.
Salt & Pepper.
1 cup of Brown or White rice.


Method

Boil water and coconut milk the add salt.

Sort and wash the rice then add it to the boiling water.

On medium heat cook until the water drys out.

Serve.

18. Pilipili Ya Kukaangwa




Ingredients



2 large hot pili pili (peppers)(Blended)
3 Large tomatoes Blended)
1 Large diced onion (Red onion preferred)
2 crashed Clove of garlic
1 tbsp. of crashed ginger
2 tbsp. cooking oil.
1 lemon (optional)
Thinly Chopped Dania ¼ cup (optional)
Salt & Pepper.







Method
Cover and simmer for 2-3 minutes.

Heat pan on a medium heat, add oil, diced onions, crashed garlic and  crashed ginger. Stir until tender.

Mix blended tomatoes and blended peppers together in a separate bowl, add them to the pan and stir.

Add lemon juice, dania and salt & pepper.


Serve.
