86. Kaimati


Kaimati are sweet, deep-fried dough balls popular at the Kenyan coast and loved across the country. They’re golden and crispy on the outside, soft on the inside, and soaked in a sticky sugar syrup. This snack is especially enjoyed during family gatherings or just with a hot cup of chai. The ingredients are simple, and the method is easy enough for anyone to try at home.


Ingredients

For the dough

  • 2 cups all-purpose flour
  • 1 teaspoon instant dry yeast
  • 2 tablespoons sugar
  • 1½ cups warm water (adjust as needed)
  • ½ teaspoon salt
  • ½ teaspoon cardamom powder (optional)
  • oil for deep frying

For the syrup

  • 1 cup sugar
  • ½ cup water
  • ½ teaspoon cardamom or lemon zest (optional)

Method

  1. In a large bowl, mix flour, yeast, sugar, salt, and cardamom if using.
  2. Gradually add warm water while mixing until you get a thick, sticky batter.
  3. Cover and let the batter rise in a warm place for 45 minutes to 1 hour until bubbly and doubled in size.
  4. Heat oil in a deep pan over medium heat.
  5. Scoop small portions of batter with your fingers or a spoon and drop into the hot oil.
  6. Fry until golden brown and cooked through, turning them to brown evenly.
  7. Remove and drain on paper towels.

For the syrup

  1. In a saucepan, combine sugar and water.
  2. Bring to a boil and simmer for about 8 to 10 minutes until slightly thick and sticky.
  3. Stir in cardamom or lemon zest if using.

Final step

  1. Dip the hot kaimati into the warm syrup and let them soak for a few minutes.
  2. Remove and serve warm or cooled.

Kaimati are perfect for tea time or as a simple dessert. Sweet, chewy, and full of flavor.
