86. Kaimati
Kaimati are sweet, deep-fried dough balls popular at the Kenyan coast and loved across the country. They’re golden and crispy on the outside, soft on the inside, and soaked in a sticky sugar syrup. This snack is especially enjoyed during family gatherings or just with a hot cup of chai. The ingredients are simple, and the method is easy enough for anyone to try at home.
Ingredients
For the dough
- 2 cups all-purpose flour
- 1 teaspoon instant dry yeast
- 2 tablespoons sugar
- 1½ cups warm water (adjust as needed)
- ½ teaspoon salt
- ½ teaspoon cardamom powder (optional)
- oil for deep frying
For the syrup
- 1 cup sugar
- ½ cup water
- ½ teaspoon cardamom or lemon zest (optional)
Method
- In a large bowl, mix flour, yeast, sugar, salt, and cardamom if using.
- Gradually add warm water while mixing until you get a thick, sticky batter.
- Cover and let the batter rise in a warm place for 45 minutes to 1 hour until bubbly and doubled in size.
- Heat oil in a deep pan over medium heat.
- Scoop small portions of batter with your fingers or a spoon and drop into the hot oil.
- Fry until golden brown and cooked through, turning them to brown evenly.
- Remove and drain on paper towels.
For the syrup
- In a saucepan, combine sugar and water.
- Bring to a boil and simmer for about 8 to 10 minutes until slightly thick and sticky.
- Stir in cardamom or lemon zest if using.
Final step
- Dip the hot kaimati into the warm syrup and let them soak for a few minutes.
- Remove and serve warm or cooled.
Kaimati are perfect for tea time or as a simple dessert. Sweet, chewy, and full of flavor.
