86. Kaimati

Kaimati are sweet, deep-fried dough balls popular at the Kenyan coast and loved across the country.  They’re golden and crispy on the outside, soft on the inside, and soaked in a sticky sugar syrup. This snack is especially enjoyed during family gatherings or just with a hot cup of chai. The ingredients are simple, and the method is easy enough for anyone to try at home. Ingredients For the dough 2 cups all-purpose flour 1 teaspoon instant dry yeast 2 tablespoons sugar 1½ cups warm water (adjust as needed) ½ teaspoon salt ½ teaspoon cardamom powder (optional) oil for deep frying For the syrup 1 cup sugar ½ cup water ½ teaspoon cardamom or lemon zest (optional) Method In a large bowl, mix flour, yeast, sugar, salt, and cardamom if using. Gradually add warm water while mixing until you get a thick, sticky batter. Cover and let the batter rise in a warm place for 45 minutes to 1 hour until bubbly and doubled in size.
