9. Viazi Karai and Tamarind Sauce

Ingredients

Boiled Potatoes( diced).
Wheat flour (sifted).
Water.
Turmeric.
Dhania (Cilantro).
Salt.
Cooking oil.

Method

Mix wheat flour, salt, turmeric, dhania and water until you have a smooth batter.

Add enough cooking oil in a pot for deep frying the potatoes.

Using your hands or a spoon, carefully coat the diced potatoes with the batter and immediately deep fry them.

Make sure the batter is cooked well. Remove them and serve.

Tamarind Sauce

Prepare tamarind. Boil some water and add ginger, tamarind and sugar.

Cook for 15 minutes, remove from the heat and sieve the mixture.

Serve.

8. Homemade Burger

Ingredients

1lb Minced meat.
2 Tomatoes.
Lettuce.
Burger buns.
Butter/ favorite dressing.
cheese (Optional)
Salt & pepper.

Method
Set your oven at 350 temperature.

Season minced meat with salt & pepper and make round shapes.

Cover your sheet pan with alminium foil, place the mince on the sheet pan.

Put the meat in the oven and cook for 20-30/ until it's done.

Toast your burger buns, apply butter, margarine or mayonnaise, put a piece of lettuce, tomatoes, onions and cheese (optional) on top.

Cover with the other piece of burger bun.

7. Ugali

Ingredients
4 cups Boiled water.
Enough corn/ maize flour.(Enough to make a dough)
Method

1. Add maize flour into the boiled water, with a wooden spoon fold the mix to a hard dough.
2. Lower the heat and simmer for 5-10 minutes.
3. Serve with your favorite protein, vegetables or soup.

6. Fried Kale/ Sukuma Wiki

Ingredients
1 Bunch of chopped kale.
1/4 chopped red onion.
3 tomatoes.
1 Tbs Oil
Salt & Pepper
Method
1.Heat pan until its hot, add oil/ butter, and chopped red onions.
2.Cook red onions until tender and add chopped tomatoes.
3.Stir, then cover and simmer for 5-10 minutes.
4.Add kale and cover.
5.let it cook for 5-10 minutes.


Serve.

5. Kachumbari (Salad)

Kachubari. (Salad)
 Ingredients
1 Onion nicely chopped
2 Tomatoes nicely chopped
Dhania (cilantro)
1/2 Lemon
2 Tbsp
Method
Soak the chopped onions in salt water for 5 minutes



,








drain and mix with the chopped tomatoes,










add dhania















Add lemone juice, salt and Serve with your favorite dish.



Ready to serve.

4. Meat Loaf and Rosemary Potatoes


Ingredients

1lb Minced Meat
1 Whole onion (diced)
2 cloves garlic 
1/2 Tsp Oregano 
1 egg

1 cup breadcrumbs 

Cheese(optional)

1/2 Tsp Salt & Pepper



Method


1. Sauté onions and garlic until tender. 

2. Mix breadcrumbs, minced meat, an egg, oregano and cooked onions. 


3. Mix the ingredients together. 


4. Add the mixture into a baking tin, bake for 50 minutes at 350 temp.





Ingredients

1 Tbsp dry/fresh rosemary 
1 Tbsp cooking oil
1tsp Salt and pepper 

Method


1. Cut potatoes into halves, add oil, salt, pepper and rosemary. 
2. Mix well. 
3. Put them on the baking sheet and put them in the oven at 350 temp for 25-30minutes.

3. Kale, Rice, and Beef Stew


Recipe

Kale(Sukuma wiki)
1 Bunch of kale
1 tbsp of Butter/Margarine/Cooking oil
Salt & Pepper

Method
Wash and cut the kale, Heat pan on a medium high, add oil and Kale. Stir for until the kale is tender. Serve

Rice (Wali wa nazi)
1 cup of Brown or White rice
11/2 cups of water
1/2 cup of coconut milk
Salt & Pepper 

Method
Boil water and coconut milk. Mean while sort and wash the rice, add salt and the clean rice. On medium heat cook until the water drys out. Serve.

Beef Stew(Mchuzi wa Nyama)
1lb beef (Small dices)
1/2 cup (Roughly chopped)
2 cloves of garlic (Roughly Chopped)
3 tomatoes (Blended)
2 tbsp Cooking Oil
Dhania (Cilantro)
Salt and Pepper

Method
On a pan heat oil in medium high brown the beef. Add onions and garlic, saute them until tender. Add tomatoes and stir and cook until the meat is well done. Serve.

1. Baked fish (Samaki Wa Kuchomwa)


Baked Fish

Ingredients.

4 pieces of fish fillet.
1 Table spoon Butter(melted).
1 Lemon(sliced).
Salt and pepper.

Method
Prepare the fish fillets, wash and dry. Arrange the fish fillet on a plate. Season with salt and pepper. Place them on a foil and add lemon slices on top of the fish. Apply/ sprinkle melted butter.  Ready. Serve with your favorite accompanimentCover with a foil and Bake at 350 degrees temp for 20-30 minutes or until it's done.
